I could be wrong but I doubt they would put in a resolution with a 16:3 aspect ratio. It wouldn't be very practical.

Do you receive an error_ Have you tried setting your "Field of View" to 90 in the settings_

Also, keep in mind that right now this sort of stuff is officially unsupported. There's no surround/eyefinity updates from nVidia or AMD.
That said, if the problem is simply that the resolution doesn't show up, you can try to force it by editing your INIs.

To be more descriptive of the problem (I use 3 monitors too)... The HUD unusable because the camera is too zoomed in so you can't really play the game. Putting FoV to 90 helps, but I think it needs to be a higher number.
I use Flawless Widescreen to help with this type of problem with other games, but they don't have a fix yet https://www.flawlesswidescreen.org
